Beta-carotene belongs to a group of substances called carotenoids. Beta-carotene, similar to other carotenoids, is a fat-soluble pigment, present mainly in plants, algae (Dunaliella salina) and photosynthesising bacteria. Carotenoids are primarily responsible for the red, orange, yellow, and green colors in fruits and vegetables. Beta-carotene is responsible for the orange color of carrots. Beta-carotene is a precursor of retinol (trans retinol) while other carotenoids such as lutein, lycopene or zeaxanthin are not. Beta-carotene has antioxidant action, however, evidence is lacking on its role in human nutrition beyond its role as provitamin A.
